USSEC Promotes Use of Soy in Colombia’s Largest Swine Operation

USSEC recently provided technical assistance to Cervalle, one of Colombia’s largest swine operations. The company owns more than 8000 sows, a deboning facility producing 2400 pork carcasses each week, as well as a sausage manufacturing division that produces 30 metric tons of product each month. Julio Chaves, USSEC contractor, reviewed the plant’s sausage formulas and suggested the addition of soy concentrate or isolate to increase the protein content. Chaves also trained Cervalle staff in the detection of PSE (pale, soft, exudative) meats and discussed the difficulties of processing PSE meats and the economic and health challenges of product.
Cervalle expressed interest in receiving more technical assistance from USSEC on good manufacturing practices and standard sanitary operating procedures in swine production facilities and sausage plants.
